panidor receives an Honourable Mention
The award-winning project was the "Valorisation of the by-product Dreche from beer: Drying technology and incorporation into bakery products", an assignment carried out in partnership with the firm Metalogonde Lda and the Instituto Superior de Agronomia de Lisboa.
The presented project fits in the technological area of food engineering and the development of new products, based on a by-product of the beer industry, the beer Dreche, and it is even more important if we take into account that, on the one hand, the by-products usually pose environmental problems and, on the other hand, the beer Dreche is something that is available practically all year round.
The aim of this project is, precisely, to increase and develop alternatives for its use in human food, having, for example, verified that the breads produced with the addition of dreche dry out and harden more slowly than the usual breads.
In addition to the Research and Development category, other projects were also recognised under the themes of Mobilisation Initiative, Product Innovation and Service Innovation, with a total of 80 candidates, of which 35 were nominated finalists.
The Food & Nutrition Awards is an initiative of the Portuguese Association of Nutritionists and the communication consulting firm GCI, constituting a multi-stakeholder platform and a mobilising agent for innovation in the agro-food sector aggregated to the areas of Education and Health.
